The production follows a low-intervention philosophy characterized by natural fermentation, where indigenous yeasts drive the transformation without the addition of spirits. This traditional approach results in a "living" wine that maintains the authentic floral and fruity characteristics of its environment. While emphasizing purity, the wine contains minimal preservatives to ensure stability and shelf life while traveling from the mountain winery to the consumer.
